Ingredients
- 8 mini tortilla stand N stuff boats
- 4 eggs
- 2 egg whites
- A dash of almond milk
- 100g ham, chopped
- 50g low-fat cheese or mozzarella
- 1 onion
- 2 handfuls of baby spinach
- 1 teaspoon of garlic
Method
- Whisk together the eggs, egg whites and almond milk. Season with salt and pepper.
- Add chopped ham, onion, spinach, garlic and cheese to the egg mixture and pour evenly into each taco boat.
- Oven bake at 180 degrees Celsius until the egg mix is cooked through (about 20 minutes).
