Satay Chicken & Broccoli Stir fry

This satay chicken stir fry with peanut sauce is so tasty and beats anything you'll get from your local takeaway! Use any nice chunky fresh veggies you have in the fridge if you don't have sugar snaps, like green beans or zucchini but make sure you eat your broccoli - it's full of Vitamin K and Calcium!
Ingredients
- 500g lean chicken breast (2 small pieces)
- 1/2 red onion
- 1 red capsicum
- 1 teaspoon minced garlic
- 1 large floret broccoli (cut into chunks)
- 1 carrot
- 10 mushrooms
- 1 handful sugar snap peas
- 1 tablespoon satay sauce
- 10 cashews nuts
Method
- Heat frying pan and spray with oil.
- Cut chicken into thin slices and cook approx. 3 minutes each side, or until no longer pink.
- Chop your onion, carrot, broccoli, capsicum, peas and mushrooms.
- In a separate pan, spray lightly with oil and add above vegetables. Cook for approx. 4 minutes.
- Add cooked chicken to your veggies and stir.
- Add garlic and satay sauce and let fry until combined and sizzling. Add your cashew nuts on top and season with salt and pepper if required.
- Serve your satay chicken stir fry as is it, or with some boiled or steamed plain rice.
