Snack Ideas - Rice cakes with avocado & cottage cheese

When a crunchy snack is in order, this ticks all your boxes - good fats, lean protein and zingy tomato.
It also makes a great healthy appetizer if you've got people around - just up the quantities to share.
- 1/4 CUP REDUCED-FAT PLAIN COTTAGE CHEESE
- 2 WHOLE RICE CAKES
- 1/2 TOMATO, SLICED
- 1/4 AVOCADO, SLICED
Spread the cottage cheese over the rice cakes, then add the tomato,
pop the avocado on top and crack over some black pepper to taste.
MIX IT UP
My other favourite topping is tuna and onion - mix one 95 g can with 2 slices of red onion,
finely diced, and spread on rice cakes or rye biscuits.
