SATAY CHICKEN KEBABS WITH MEDITERRANEAN SALAD

INGREDIENTS
▪️ Two tablespoons Yeos Satay sauce
▪️ One lime
▪️ 400g chicken breast (2 pieces)
▪️ Four wooden skewers (soak in water, so they don't burn)

Mediterranean  Salad
▪️  Two handfuls lettuce
▪️  One tomato or 10 cherry tomatoes
▪️  One carrot (sliced)
▪️  One avocado
▪️  One small cucumber
▪️  Two tablespoons balsamic vinegar

METHOD
1/ Cut chicken breast into bite-size chunks
2/ In a bowl or plate cover over with lime juice and satay sauce and leave for 5 min if possible
3/ Put chicken onto skewers and cook on a pan approx 4 minutes each side or until cooked
4/ Make the salad - add all ingredients in a bowl and mix through with balsamic vinegar or low sugar dressing of your choice
5/ Plate up and pop skewers on top of salad
