BEEF ENCHILADAS

This Mexican classic is a family favourite, and you can add whatever you like to them! 

Ingredients 

  • 600g lean beef mince
  • 2 large carrots chopped
  • 4 large wholemeal wraps
  • 1 cup low-fat cheddar cheese
  • 1 200g tin black beans
  • 1/2 red onion diced
  • 400g can whole peeled tomatoes
  • If you want spicing, add 1 teaspoon chilli powder
  • 1 avocado
  • 1 large lime

Method

  1. Heat frypan and spray with oil
  2. Cook mince, onions, and carrots
  3. When mince nearly cooked add black beans (drained and rinsed) chilli, and tomatoes and stir
  4. Cut wraps in half so you have 8 wraps
  5. In each wrap add your beef mixture and wrap
  6. Place in a baking tray and sprinkle cheese over each wrap
  7. Bake in oven 15 min or until cheese melted
  8. Drizzle with lime juice
  9. Serve with avocado
