SUPER SUSHI ROLLS

Don't want to look like a Sumo Wrestler? Then brush regular Sushi Rolls, which are surprisingly high in sugar and go DIY instead.

▪️​ 1 x 210 gram can tuna in spring water drained and flaked
▪️​ 1 Tablespoon plain Greek yoghurt
▪️​ 2 Nori sheets
▪️​ 1 Cup of shredded vegetables (such as carrot, capsicum and cucumber.)
▪️​ 1/4 Avocado, sliced

1/ Chuck the tuna in a bowl with the yoghurt and give it a really good stir.
 
2/ Place one Nori sheet on a piece of baking paper, or on a bamboo mat if you're already a bit of a Sushi Master. 
 
3/ Spread half the tuna mixture over the bottom two-thirds of the Nori, leaving a small border around the edges. Place half your veggies and avocado in a line across the middle of the tuna. 
 
4/ Lift the end of the paper closest to you up and over the filling, enclosing the veggies and tucking the front edge of the Nori into the roll. Keep the paper clear of the Nori and continue rolling until the roll is complete. Repeat to make two rolls.
 
5/ Cut each roll in half and eat immediately as the wrappers soften on standing.
