Steak Power Bowl

Serves 4

* 4 pieces lean steak (approx 150g each)
* 1 small sweet potato
* 3 handfuls kale
* 1 small red capsicum
* 1 brown onion
* large handful mushrooms chopped
* 1 punnet cherry tomatoes
* 1 large avocado
* 1 bunch broccoli
* 2 teaspoons minced garlic
* 1 lemon
* parsley 

ADAMS TIP: I leave the skin on the sweet potato for extra nutrients and flavour!

METHOD

1. preheat oven 180 degrees
2. on a baking tray with baking paper cut sweet potato into bite-sized chunks, drizzle with olive oil and bake approx 10 min or until golden and cooked through
3. while cooking cut steak into thin slices and cook on a hot frypan with onion and mushrooms  approx 5 min or until cooked to your liking
4. chop broccoli and microwave approx 4min
5. in a bowl mix kale, tomatoes, and avocado chunks. 
6. add steak mixture, cooked sweet potato and broccoli to bowl
7.drizzle over dressing and add parsley and serve

to make dressing: in a cup mix minced garlic (or fresh garlic) with the juice of a lemon)
