Mongolian Beef

  • 500g lean beef sliced
  • 1 large brown onion (thinnly chopped)
  • 2 carrots (thinnly chopped)
  • 1/2 red capsicum
  • bunch of bok choy
  • 1 teaspoon minced garlic
  • 1 tablespoon soy sauce
  • 1 cup salt reduced beef stock
  • 1 teaspoon ginger
  • 1 tablespoon sesame seeds
  • METHOD
  • heat pan and spray with oil
  • in pan cook beef strips, onion, garlic, carrot and capsicum
  • when amost cooked add bok choy, beef stock, soy sauce and ginger
  • stir and serve on plate 
  • sprinkle sesame seeds
  • TIP: can have with 1/2 cup cooked rice per person
