BEEF STIR FRY WITH UDON NOODLES

Serves 4. Approx 400 calories per meal. 

Ingredients

  • 400gms udon noodles
  • 600gm lean beef (sliced)
  • Bunch of broccolli
  • 1 carrot - jullienne 
  • 1/2 red onion
  • 1/2 red capsicum
  • 200gm snopw peas
  • Handful of mushrooms diced

Method

Stir Fry

  • Boil 400g udon noodles for 30 secs, stir and drain 
  • Add broccoli and snow peas to boiling water for approx 2 min
  • In non stick pan spray with olive oil add carrot, red onion, red capsicum, diced mushrooms and sliced beef
  • When beef is brown add the cooked broccoli and beans to the pan and stir through
  • Add cooked noodles

Sauce

  • Mix 2 tablesppons sweet chilli sauce, 2 tablespoons soy sauce and 1/2 squeezed lime juice
  • Stir sauce through and toss throuh the stir fry
