BARRA WITH SWEET POTATO AND SMASHED AVO

This tasty barra recipe will have you changing things up in the kitchen tonight with a bit of extra homemade salsa on the side! Enjoy guys -

INGREDIENTS

  • 2 pieces Barra (approx 300g total)
  • 1/2 large sweet potato
  • 1 teaspoon butter
  • 1/4 C milk
  • 1/2 avocado
  • 1 lemon
  • 1 Tablespoon Salsa
  • 8 pieces asparagus (can use frozen spinach if you prefer)

METHOD

  1. Heat fry pan and spray with oil
  2. Cook barra approx 5 min each side till cooked
  3. While barra is cooking, chop sweet potato and put in microwave approx 8min
  4. When sweet potato cooked add butter and milk and mash with fork
  5. Cook asparagus in hot water on stove for approx 8 min
  6. Avocado smash - get avocado cut up in a bowl and squeeze all the lemon juice out.
  7. Add salsa and mix
